  2. In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and black pepper until well-coated.
  3. Spread the sweet potatoes evenly on a baking sheet.
  4. Roast for about 25-30 minutes, stirring halfway through.
  5. In the last 10 minutes, add the chopped walnuts to the baking sheet.
Finishing Touches
