Finishing Touches
- Once the sweet potatoes are done, remove from the oven and drizzle the maple syrup over them.
- Toss gently to combine and sprinkle crumbled goat cheese on top.
- Return to the oven for an additional 5 minutes to warm the cheese.
- Garnish with fresh parsley if desired before serving.
Notes
For a healthier option, use coconut oil instead of olive oil. Consider substituting maple syrup with honey or agave nectar. You can add other roasted vegetables for extra nutrition.
