Preparation
- Preheat the oven to 350°F (175°C). Line a 9x13-inch baking dish with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar using a hand mixer or stand mixer for about 2-3 minutes until light and fluffy.
- Add the eggs one at a time, mixing thoroughly before adding the next. Then, pour in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing gently until just combined.
- Press the dough evenly into the prepared baking dish, smoothing the top with a spatula.
- Bake in the preheated oven for 18-22 minutes, until the edges are lightly golden, and a toothpick inserted into the center comes out clean.
- Allow the cookie bars to cool completely in the pan before removing and cutting into squares.
Notes
Chill the dough for thicker cookie bars. Top with sprinkles or frosting for added fun. Storage: Keep in an airtight container at room temperature for up to a week or freeze for up to three months.
