Preparation
- Preheat your oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake directly on the oven rack for about 45-60 minutes, until tender.
- Remove the potatoes from the oven and let them cool for a few minutes, then slice each potato in half lengthwise.
- Scoop out the insides of the potatoes into a mixing bowl, leaving a small border around the skin.
- Add sour cream, shredded cheddar cheese, milk, chopped green onions, softened butter, salt, and pepper to the mixing bowl. Mash until creamy.
- Spoon the mixture back into the potato skins, mounding them slightly.
- Return the filled potatoes to the oven and bake for another 15-20 minutes, or until heated through and tops are golden.
Notes
Use a variety of cheese, add some protein like cooked bacon bits, or spice it up with smoked paprika. They can be prepared a day ahead and stored in the refrigerator.
