Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the potatoes with a fork, then bake directly on the oven rack for about 45-60 minutes, until tender.
  3. Remove the potatoes from the oven and let them cool for a few minutes, then slice each potato in half lengthwise.
  4. Scoop out the insides of the potatoes into a mixing bowl, leaving a small border around the skin.
  5. Add sour cream, shredded cheddar cheese, milk, chopped green onions, softened butter, salt, and pepper to the mixing bowl. Mash until creamy.
  6. Spoon the mixture back into the potato skins, mounding them slightly.
  7. Return the filled potatoes to the oven and bake for another 15-20 minutes, or until heated through and tops are golden.

Notes

Use a variety of cheese, add some protein like cooked bacon bits, or spice it up with smoked paprika. They can be prepared a day ahead and stored in the refrigerator.
