Cooking the Pasta
- Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
Sautéing the Shrimp
- In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink. Remove the shrimp and set aside.
Creating the Flavor Base
- Add minced garlic to the skillet and cook for about 1 minute until fragrant.
- Add halved cherry tomatoes and cook for an additional 3-4 minutes until softened.
- Toss in the fresh spinach and cook for 1-2 minutes until wilted.
Making the Cream Sauce
- Pour in the heavy cream and bring the mixture to a simmer, allowing the flavors to meld.
- Stir in grated Parmesan cheese, dried oregano, salt, and pepper.
- Add the cooked pasta and sautéed shrimp to the skillet and toss to coat.
- Garnish with freshly chopped basil.
Notes
For an extra kick, add red pepper flakes during the sautéing. Use zoodles instead of pasta for a healthier alternative.
