Ingredients
  

Pasta and Shrimp
  • 8 oz pasta (linguine or spaghetti)
  • 1 lb shrimp, peeled and deveined
Vegetables and Seasoning
  • 2 cloves garlic, minced
  • 1 cup cherry tomatoes, halved
  • 2 cups fresh spinach
  • 1 tsp dried oregano
  • Salt to taste
  • Pepper to taste
Cream Sauce
  • 1 tbsp olive oil
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese
Garnish
  • 1 Fresh basil, chopped for garnish

Method
 

Cooking the Pasta
  1. Boil a large pot of salted water and cook the pasta according to package instructions until al dente. Drain and set aside.
Sautéing the Shrimp
  1. In a large skillet, heat the olive oil over medium heat. Add the shrimp and cook for about 2-3 minutes on each side until they turn pink. Remove the shrimp and set aside.
Creating the Flavor Base
  1. Add minced garlic to the skillet and cook for about 1 minute until fragrant.
  2. Add halved cherry tomatoes and cook for an additional 3-4 minutes until softened.
  3. Toss in the fresh spinach and cook for 1-2 minutes until wilted.
Making the Cream Sauce
  1. Pour in the heavy cream and bring the mixture to a simmer, allowing the flavors to meld.
  2. Stir in grated Parmesan cheese, dried oregano, salt, and pepper.
  3. Add the cooked pasta and sautéed shrimp to the skillet and toss to coat.
  4. Garnish with freshly chopped basil.

Notes

For an extra kick, add red pepper flakes during the sautéing. Use zoodles instead of pasta for a healthier alternative.
