Ingredients
  

For the teriyaki shrimp
  • 1 lb large shrimp, peeled and deveined for that juicy texture
  • 1/4 cup teriyaki sauce providing the rich, sweet glaze
  • 2 tbsp soy sauce adding umami depth
  • 1 tbsp sesame oil imparting a nutty aroma
  • 1 tbsp honey for extra sweetness

For the pineapple rice

Method
 

Preparation
  1. In a medium bowl, combine teriyaki sauce, soy sauce, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes. Add the shrimp, tossing to coat. Marinate for at least 15 minutes.
Cooking the Shrimp
  1. Heat a large skillet over medium-high heat. Cook the marinated shrimp for 2-3 minutes on each side until pink and cooked through. Remove from heat.
Preparing the Pineapple Rice
  1. In the same skillet, add sesame oil and heat. Sauté green onions and red bell pepper for 2-3 minutes until tender. Add diced pineapple and sauté for another minute.
  2. Add cooked rice, breaking it up. Stir in soy sauce, rice vinegar, garlic powder, and season with salt and pepper. Sauté for another 2-3 minutes until heated through.
Assembly
  1. Use a ring mold or small bowl to layer rice and shrimp. Start with pineapple rice at the bottom, followed by shrimp. Press gently to hold shape. Repeat for desired servings.
Garnishing
  1. Garnish each stack with fresh cilantro, sesame seeds, and lime juice. Serve immediately.

Notes

Grill the shrimp for added flavor, substitute shrimp with chicken or tofu, and experiment with vegetables. Taste and adjust seasoning as you cook.
