Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, whisk together cottage cheese, eggs, Greek yogurt, honey, vanilla extract, lemon zest, and lemon juice until smooth.
- Stir in rolled oats, baking powder, and salt until well combined.
- Gently fold in the blueberries.
- Grease an 8×8 inch baking dish with butter.
- Pour the mixture into the prepared baking dish.
- Drizzle melted butter over the top and sprinkle brown sugar.
- Bake for 30-35 minutes or until golden and a toothpick comes out clean.
- Allow to cool for 10-15 minutes, then slice and serve warm.
