Method
Preheat the Oven
- Preheat your oven to 325°F (165°C).
Prepare the Crust
- In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until it resembles wet sand.
- Firmly press the mixture into the bottom of a greased 9×13-inch baking pan.
Make the Cheesecake Filling
- In a large mixing bowl, beat the softened cream cheese with 1 cup granulated sugar until smooth and creamy.
- Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and flour until smooth.
Bake the Cheesecake
- Pour the cheesecake filling over the prepared crust. Bake for 30-35 minutes until set and lightly golden.
- Let it cool to room temperature, then refrigerate for at least 2 hours.
Prepare the Strawberry Topping
- In a small saucepan, combine diced strawberries, 1/4 cup sugar, and lemon juice. Cook over medium heat for 5-7 minutes until thickened.
- Remove from heat and let cool.
Assemble and Serve
- Once chilled, spoon the strawberry topping over the cheesecake bars, slice into squares, and serve.
Notes
For enhanced flavor, consider a hint of almond extract or mixing in cornstarch for stability. You can reserve some diced strawberries for garnish.
