Ingredients
  

For the crust
  • 1.5 cups 1 1/2 cups graham cracker crumbs Provides the base for the cheesecake.

For the strawberry topping
  • 1.5 cups 1 1/2 cups fresh strawberries, diced Provides a fresh, fruity topping.
  • 0.25 cups 1/4 cup granulated sugar for strawberries Enhances natural sweetness.
  • 1 tbsp 1 tbsp lemon juice Adds acidity to balance flavors.

Method
 

Preheat the Oven
  1. Preheat your oven to 325°F (165°C).
Prepare the Crust
  1. In a medium bowl, combine graham cracker crumbs, 1/4 cup sugar, and melted butter. Mix until it resembles wet sand.
  2. Firmly press the mixture into the bottom of a greased 9×13-inch baking pan.
Make the Cheesecake Filling
  1. In a large mixing bowl, beat the softened cream cheese with 1 cup granulated sugar until smooth and creamy.
  2. Add the eggs one at a time, mixing well after each addition. Stir in vanilla extract, sour cream, and flour until smooth.
Bake the Cheesecake
  1. Pour the cheesecake filling over the prepared crust. Bake for 30-35 minutes until set and lightly golden.
  2. Let it cool to room temperature, then refrigerate for at least 2 hours.
Prepare the Strawberry Topping
  1. In a small saucepan, combine diced strawberries, 1/4 cup sugar, and lemon juice. Cook over medium heat for 5-7 minutes until thickened.
  2. Remove from heat and let cool.
Assemble and Serve
  1. Once chilled, spoon the strawberry topping over the cheesecake bars, slice into squares, and serve.

Notes

For enhanced flavor, consider a hint of almond extract or mixing in cornstarch for stability. You can reserve some diced strawberries for garnish.
