Preparation
- Preheat your grill or stovetop griddle over medium-high heat.
- In a small bowl, mix mayonnaise, Sriracha, ketchup, and a pinch of salt and pepper to create the spicy mayo sauce.
- Divide the ground beef into four portions and shape into patties. Make a small indentation in the center and season with salt and pepper.
- Lightly oil the grill or griddle with olive oil.
Cooking
- Cook the patties on the grill for 4-5 minutes on one side, then flip and cook for another 4-5 minutes, until desired doneness.
- Place a slice of pepper jack on each patty when nearly done and close the lid for 1-2 minutes to melt.
- Toast the hamburger buns on the grill or toaster until golden brown.
Assembly
- Spread spicy mayo on the bottom of each toasted bun, top with the burger patty, jalapeños, red onion, and any additional garnishes.
- Top with the bun's top half and serve immediately.
Notes
Customize your heat by adjusting jalapeño and Sriracha. Experiment with toppings like avocado or bacon.
