For the Burger
  • 1 lb ground beef (80% lean)
  • 4 pieces hamburger buns Soft and fresh
  • 4 slices pepper jack cheese Creamy with a spicy kick
  • 1 piece fresh jalapeño, sliced Seeds removed for less heat
  • 1/2 piece red onion, sliced Adds sweetness and crunch
  • 1 tablespoon olive oil For grilling
  • 2 tablespoons mayonnaise For spicy mayo sauce
  • 1 tablespoon Sriracha sauce Adjust for spice level
  • 1 tablespoon ketchup Classic addition
  • to taste none Salt and pepper Essential seasoning
  • to taste none Lettuce For garnish (optional)
  • to taste none Pickles For garnish (optional)
For the Spicy Mayo Sauce
  • 2 tablespoons mayonnaise Base of the sauce
  • 1 tablespoon Sriracha sauce Adjust for heat
  • 1 tablespoon ketchup For sweetness
  • a pinch none salt and pepper For flavor

Method
 

Preparation
  1. Preheat your grill or stovetop griddle over medium-high heat.
  2. In a small bowl, mix mayonnaise, Sriracha, ketchup, and a pinch of salt and pepper to create the spicy mayo sauce.
  3. Divide the ground beef into four portions and shape into patties. Make a small indentation in the center and season with salt and pepper.
  4. Lightly oil the grill or griddle with olive oil.
Cooking
  1. Cook the patties on the grill for 4-5 minutes on one side, then flip and cook for another 4-5 minutes, until desired doneness.
  2. Place a slice of pepper jack on each patty when nearly done and close the lid for 1-2 minutes to melt.
  3. Toast the hamburger buns on the grill or toaster until golden brown.
Assembly
  1. Spread spicy mayo on the bottom of each toasted bun, top with the burger patty, jalapeños, red onion, and any additional garnishes.
  2. Top with the bun's top half and serve immediately.

Notes

Customize your heat by adjusting jalapeño and Sriracha. Experiment with toppings like avocado or bacon.
