Preparation
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon, and salt.
- In a separate bowl, beat the eggs, then add in the milk, melted butter, and vanilla extract. Mix until smooth and creamy.
- Gradually add the wet ingredients to the dry ingredients, stirring gently to combine.
- Gently fold the diced apples into the batter, distributing them evenly.
Cooking
- Heat the vegetable oil in a deep skillet or pot over medium heat to about 350°F (175°C).
- Drop spoonfuls of the batter into the hot oil, frying them in batches for 2-3 minutes on each side, or until golden brown.
- Remove the fritters from the oil and transfer them to a paper towel-lined plate to drain.
Glazing
- While the fritters cool slightly, whisk together the powdered sugar, milk, and vanilla extract until smooth.
- Drizzle the vanilla glaze over the warm fritters before serving.
Notes
For a healthier version, you can use whole wheat flour or substitute applesauce for some of the butter. To store, freeze cooled fritters in a single layer, then transfer to a freezer bag for up to 3 months.
