Preparation
  1. Preheat your oven to 375°F (190°C) and either grease a muffin tin or line it with paper liners for easy removal.
  2. In a skillet over medium heat, cook the ground sausage, stirring occasionally until fully cooked and browned. Drain any excess grease and set aside.
  3. In a large bowl, whisk together the flour, baking powder, salt, and black pepper. Fold in the shredded cheddar and Parmesan cheese.
  4. In a separate bowl, whisk together the eggs, milk, and melted butter until well combined.
  5. Pour the wet mixture into the bowl with dry ingredients, stirring gently until just combined. Fold in the cooked sausage.
  6. Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown. A toothpick inserted should come out clean.
  2. Allow the muffins to cool slightly before serving.

Notes

To customize, experiment with different cheeses, add finely diced veggies, or even make mini muffins.
