Preparation
- Preheat your oven to 375°F (190°C) and either grease a muffin tin or line it with paper liners for easy removal.
- In a skillet over medium heat, cook the ground sausage, stirring occasionally until fully cooked and browned. Drain any excess grease and set aside.
- In a large bowl, whisk together the flour, baking powder, salt, and black pepper. Fold in the shredded cheddar and Parmesan cheese.
- In a separate bowl, whisk together the eggs, milk, and melted butter until well combined.
- Pour the wet mixture into the bowl with dry ingredients, stirring gently until just combined. Fold in the cooked sausage.
- Spoon the batter into the prepared muffin tin, filling each cup about three-quarters full.
Baking
- Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the muffins are golden brown. A toothpick inserted should come out clean.
- Allow the muffins to cool slightly before serving.
Notes
To customize, experiment with different cheeses, add finely diced veggies, or even make mini muffins.
