- Preheat your oven to 350°F (175°C).
- In a large skillet, melt butter over medium heat.
- Add the chopped onion and celery and cook for 3–4 minutes until softened.
- Add the garlic powder, sage, salt, and pepper and stir to combine.
- Pour in the chicken broth and bring to a simmer.
- Stir in the stuffing mix and let it absorb the liquid for 5 minutes.
- In a large baking dish, combine the shredded rotisserie chicken and the stuffing mixture. Mix well.
- If using, sprinkle the shredded cheddar cheese on top.
- Cover with foil and bake for 20–25 minutes.
- Remove the foil and bake for an additional 5–10 minutes, or until the top is golden and crispy.
- Let cool for a few minutes before serving.
