Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together flour, baking powder, and salt until well combined.
  3. In a large bowl, beat softened butter and granulated sugar together until light and fluffy.
  4. Add the egg and vanilla extract, mixing until smooth.
  5. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  6. Roll the dough into tablespoon-sized balls and place them on prepared baking sheets, spaced about 2 inches apart.
  7. Use a fork to lightly press down on each dough ball, flattening slightly.
Baking
  1. Bake for 10-12 minutes, or until edges begin to turn golden.
  2. Allow cookies to cool completely on a wire rack before icing.
Icing
  1. To make the icing, mix powdered sugar, milk, and vanilla extract until smooth.
  2. Divide icing into separate bowls, adding food coloring to each.
  3. Once cookies are cooled, decorate with colored icing using a spoon or piping bag.
  4. Add sprinkles or edible glitter if desired and let icing set before serving.

Notes

Use room temperature butter for better incorporation with sugar. For thicker cookies, chill the dough for an hour before rolling out. Experiment with different extracts and sprinkle colors.
