Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the butternut squash cubes with olive oil, brown sugar, cinnamon, salt, and pepper. Toss until the squash is completely coated.
  3. Spread the coated squash in a single layer on a baking sheet lined with parchment paper.
Cooking
  1. Roast in the preheated oven for about 25-30 minutes, or until the squash is tender and caramelized. Stir halfway through to ensure even cooking.
  2. Remove the squash from the oven and sprinkle the crumbled feta cheese and chopped nuts (if using) over the top.
  3. Return to the oven and roast for an additional 5 minutes.
  4. Remove from the oven and garnish with fresh parsley if desired.

Notes

Serve warm as a side dish or vegetarian main course. Adjust seasoning to taste; for a healthier version, substitute Greek yogurt for feta. Can prepare ahead of time by refrigerating the tossed ingredients for up to 24 hours before roasting.
