Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, combine the butternut squash cubes with olive oil, brown sugar, cinnamon, salt, and pepper. Toss until the squash is completely coated.
- Spread the coated squash in a single layer on a baking sheet lined with parchment paper.
Cooking
- Roast in the preheated oven for about 25-30 minutes, or until the squash is tender and caramelized. Stir halfway through to ensure even cooking.
- Remove the squash from the oven and sprinkle the crumbled feta cheese and chopped nuts (if using) over the top.
- Return to the oven and roast for an additional 5 minutes.
- Remove from the oven and garnish with fresh parsley if desired.
Notes
Serve warm as a side dish or vegetarian main course. Adjust seasoning to taste; for a healthier version, substitute Greek yogurt for feta. Can prepare ahead of time by refrigerating the tossed ingredients for up to 24 hours before roasting.
