Method
 

Preparation
  1. Heat olive oil: In a large pot, heat the olive oil over medium heat.
  2. Sauté onion and garlic: Add the chopped onion and minced garlic to the pot and sauté for about 3-4 minutes until the onion becomes translucent and the garlic fragrant.
  3. Add tomatoes and broth: Pour in the can of diced tomatoes along with the vegetable or chicken broth. Stir in the dried oregano, dried basil, salt, and pepper.
Cooking
  1. Bring to a boil: Increase the heat to bring the mixture to a boil, then lower the heat to let it simmer.
  2. Cook the ravioli: Add the frozen cheese ravioli directly to the pot and cook according to the package instructions, usually about 4-5 minutes.
  3. Incorporate spinach: Stir in the chopped spinach and continue to cook for another 2-3 minutes, just until it wilts.
Serving
  1. Ladle and serve: Finally, ladle the delicious soup into bowls and garnish with freshly grated Parmesan cheese.

Notes

Consider adding a splash of lemon juice for brightness or a pinch of red pepper flakes for heat. You can also add more vegetables like carrots or zucchini. Substitute a bit of broth with cream for a richer flavor.
