  • 1 egg beaten (for sealing the pastry)
Filling Ingredients
  • 4 oz cream cheese, softened Ensure cream cheese is at room temperature for easy mixing.
  • 1/4 cup powdered sugar Adds sweetness to the filling.
  • 1/2 teaspoon vanilla extract Enhances flavor.
  • 1/4 cup raspberry jam Use your favorite brand or homemade jam.
  • 1 tablespoon fresh raspberries Optional garnish for serving.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry on a lightly floured surface and cut it into 3x3 inch squares.
  3. In a medium-sized bowl, mix cream cheese, powdered sugar, and vanilla extract until smooth.
Assembly
  1. Place a spoonful of cream cheese mixture in the center of each puff pastry square.
  2. Top with a dollop of raspberry jam.
  3. Fold and seal the corners of the pastry over the filling using the beaten egg.
  4. Arrange bites on a baking sheet lined with parchment paper.
Baking
  1. Bake for 12-15 minutes until golden brown and puffed.
  2. Garnish with fresh raspberries before serving, if desired.

Notes

Chill puff pastry before rolling for easier handling. Optional: Add lemon zest or chocolate chips to the filling for variations.
