  1. Gather your ingredients, ensuring your pineapple chunks are frozen.
  2. In a blender, combine the frozen pineapple chunks, coconut milk, rainbow sherbet, and ice cubes.
  3. Blend on high until smooth and creamy. Adjust consistency with more coconut milk if needed.
  4. If using, add white rum and pulse briefly to mix.
  5. Pour the mixture into glasses and garnish with maraschino cherries and orange slices.

Notes

To make it extra special, add a splash of lemon or lime juice. For added texture, mix in sweetened shredded coconut or blend in a banana.
