  • 1 pound boneless, skinless chicken breasts, cubed Use fresh or rotisserie chicken for convenience.
  • 2 cups cooked rice Can be white or brown rice.
  • 1 cup pineapple chunks Fresh or canned pineapple works well.
  • 1 medium bell pepper, chopped Use red or green bell pepper.
  • 1 medium onion, chopped Any type of onion can be used.
  • 3 cloves garlic, minced Fresh garlic recommended.
  • 3 tablespoons soy sauce Low sodium soy sauce can be used.
  • 2 tablespoons honey Can be adjusted for sweetness.
  • 1 tablespoon olive oil For cooking.
  • Salt and pepper to taste Adjust according to preference.
  • Green onions, chopped For garnish.
  • Sesame seeds For garnish.

Method
 

Cooking
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the cubed chicken to the skillet, seasoning with salt and pepper. Cook for 5-7 minutes until the chicken is browned and cooked through.
  3. Once the chicken is cooked, add the chopped onion, garlic, and bell pepper to the skillet. Sauté for another 3-4 minutes, allowing the vegetables to soften and become fragrant.
  4. Stir in the pineapple chunks, soy sauce, and honey. Cook for an additional 2-3 minutes, allowing the flavors to meld together.
  5. Add the cooked rice to the skillet, mixing all ingredients thoroughly. Heat everything through for another 2-3 minutes.
  6. Serve hot, garnished with chopped green onions and sesame seeds.

Notes

For added flavor, consider marinating the chicken in the soy sauce and honey before cooking. You can also add a squeeze of fresh lime juice after adding the rice for a tangy boost. To customize, feel free to use shrimp or tofu instead of chicken.
