Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter, sugar, egg, vanilla extract, and salt. Mix until smooth.
- Roll the dough into small balls, about 1 inch in diameter.
- Place the dough balls on a lined baking sheet, spacing them out.
- With a fork, press down each ball to create a criss-cross pattern.
- Spoon a dollop of jelly into the center of each cookie.
Baking
- Bake for 8-10 minutes until lightly golden on the edges.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
Ensure peanut butter is well mixed. For a vegan version, substitute the egg with a flax egg.
