  • 1 cup peanut butter Smooth peanut butter recommended
  • 1 cup sugar Granulated sugar
  • 1 large egg Acts as a binder
  • 1/2 teaspoon vanilla extract Enhances flavor
  • 1/4 teaspoon salt Balances sweetness
For the filling
  • 1/4 cup jelly or jam Any flavor preferred

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, sugar, egg, vanilla extract, and salt. Mix until smooth.
  3. Roll the dough into small balls, about 1 inch in diameter.
  4. Place the dough balls on a lined baking sheet, spacing them out.
  5. With a fork, press down each ball to create a criss-cross pattern.
  6. Spoon a dollop of jelly into the center of each cookie.
Baking
  1. Bake for 8-10 minutes until lightly golden on the edges.
  2. Let cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

Ensure peanut butter is well mixed. For a vegan version, substitute the egg with a flax egg.
