Preparation
  1. In a large mixing bowl, combine the drained mandarin oranges, mini marshmallows, crushed pineapple, and cottage cheese. Stir gently to ensure the fruits are well-distributed without breaking the mandarin oranges.
  2. In a separate bowl, whisk together the whipped topping, orange juice, and vanilla extract until smooth and well-integrated.
  3. Gently fold the whipped topping mixture into the fruit mixture, taking care not to overmix.
  4. Transfer the salad to a serving dish and refrigerate for at least one hour.
  5. Just before serving, sprinkle the orange zest over the top.

Notes
