Method
 

Preparation
  1. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  2. Add 1 lb chicken breast pieces, seasoning them with salt and pepper. Cook until browned, about 5-7 minutes, ensuring the chicken is fully cooked through.
  3. Once the chicken is perfectly browned, stir in 2 cloves minced garlic and cook for an additional minute until fragrant.
  4. Next, add 3 cups of chicken broth, 1 can of diced tomatoes, 1 teaspoon of Italian seasoning, and 12 oz of penne pasta to the pot. Bring to a boil.
  5. Reduce the heat and let it simmer, covered, for about 12-15 minutes, until the pasta is tender and most of the liquid is absorbed.
  6. Remove the pot from heat and stir in 1 cup of shredded mozzarella cheese and 1/2 cup grated Parmesan cheese until melted.
  7. Garnish with fresh basil before serving.

Notes

For extra flavor, consider marinating the chicken in Italian dressing. Add chopped spinach or kale during the last few minutes for nutrition. Optionally sprinkle red pepper flakes for spice. Leftovers can be baked with extra cheese.
