  1. In a large pot, heat the olive oil over medium heat.
  2. Add the cut chicken pieces to the hot pan. Season with salt, pepper, and Italian seasoning. Sauté for about 5-7 minutes, or until the chicken is beautifully browned and cooked through.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the uncooked penne pasta directly to the pot, followed by the chicken broth and marinara sauce. Stir to combine.
  5. Bring the mixture to a boil, then reduce the heat and cover the pot. Let it simmer for about 12-15 minutes or until the pasta is tender.
  6. Once the pasta is cooked, stir in the mozzarella cheese and half of the Parmesan cheese until melted.
  7. Dish out your pasta into bowls and garnish with the remaining Parmesan cheese and fresh basil.

Notes

For added nutrition, you can include vegetables like spinach or cherry tomatoes. Use red pepper flakes for some heat. Leftovers can be stored in an airtight container in the fridge for up to 3-4 days.
