Preparation
  1. In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, breadcrumbs, green onions, and the beaten egg. Mix everything until well combined.
  2. Season the mixture with salt and pepper to taste. Stir gently to integrate the seasonings.
  3. With your hands, scoop small portions of the mixture, about 1 tablespoon each, and shape them into balls or puffs.
Cooking
  1. Fry: Heat oil in a large skillet over medium heat. Carefully place the potato balls into the hot oil and cook for 3-4 minutes on each side, or until golden brown.
  2. Bake: Preheat your oven to 375°F (190°C). Spray a baking sheet with cooking spray and arrange the puffs on it. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.

Notes
