- In a large mixing bowl, combine the mashed potatoes, cheddar cheese, Parmesan cheese, breadcrumbs, green onions, and the beaten egg. Mix everything until well combined.
- Season the mixture with salt and pepper to taste. Stir gently to integrate the seasonings.
- With your hands, scoop small portions of the mixture, about 1 tablespoon each, and shape them into balls or puffs.
Cooking
- Fry: Heat oil in a large skillet over medium heat. Carefully place the potato balls into the hot oil and cook for 3-4 minutes on each side, or until golden brown.
- Bake: Preheat your oven to 375°F (190°C). Spray a baking sheet with cooking spray and arrange the puffs on it. Bake for 20-25 minutes, flipping halfway through, until golden and crispy.
Serving
- Serve the puffs warm with your favorite dipping sauce or enjoy them on their own.
Notes
If the mixture is too loose, add more breadcrumbs to help it hold its shape. For extra flavor, mix in cooked bacon bits, herbs, or any leftover vegetables. Sprinkle with more breadcrumbs before frying or baking for extra crispiness.
