Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, parsley, egg, minced garlic, salt, and pepper.
  3. Form the mixture into meatballs, about 1 ½ inches in size.
  4. Place the meatballs on a baking sheet lined with parchment paper.
Cooking
  1. Bake meatballs for 15-18 minutes or until cooked through.
  2. While the meatballs bake, heat olive oil in a skillet over medium heat.
  3. Add minced garlic and sauté for 1-2 minutes until fragrant.
  4. Add chicken broth, heavy cream, sun-dried tomatoes, Italian seasoning, and red pepper flakes. Stir and simmer for 4-5 minutes.
  5. Add grated Parmesan cheese and stir until melted and smooth.
  6. Add the cooked meatballs to the skillet and gently toss to coat in the sauce, simmer for another 2-3 minutes.
  7. Serve hot, garnished with extra parsley and Parmesan if desired.

Notes

For added flavor, let the meatballs rest in the fridge for 30 minutes before baking.
