Preparation
- Preheat your oven to 350°F (175°C), and grease a muffin tin or use silicone muffin cups.
- In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually mix into the wet mixture until just combined.
- Take about 1.5 tablespoons of cookie dough and press it into the base and sides of each muffin cup.
Baking the Cookie Cups
- Bake the cookie cups for about 10-12 minutes, or until lightly golden and just set.
- Allow them to cool in the pan for a few minutes, then transfer to a wire rack to cool completely.
Preparing the Lemon Filling
- In another bowl, whisk together the granulated sugar, eggs, lemon juice, lemon zest, and flour until smooth.
- Once the cookie cups are cool, pour the lemon filling into each cup, filling them about 3/4 full.
Baking the Filled Cookie Cups
- Return them to the oven for another 15-18 minutes, or until the filling is set and slightly golden on top.
- Allow to cool completely and dust with powdered sugar before serving.
Notes
Ensure butter is softened, but not melted. Chill the dough if it's too sticky. Oven temperatures can vary, so adjust baking time as needed.
