Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  3. In a skillet over medium heat, cook the Italian sausage until browned and fully cooked. Drain any excess fat.
  4. In a large bowl, combine the cooked sausage, ricotta cheese, ½ cup of mozzarella cheese, Parmesan cheese, beaten egg, Italian seasoning, salt, and pepper. Mix until well combined.
  5. Spread a thin layer of marinara sauce on the bottom of a 9×13-inch baking dish.
Assembly
  1. Take a cooked lasagna noodle and lay it flat on a surface. Spoon 2-3 tablespoons of the sausage mixture onto the noodle and roll it up tightly. Place seam side down in the baking dish. Repeat with all remaining noodles and filling.
  2. Pour the remaining marinara sauce over the roll-ups, ensuring each is generously coated. Sprinkle the remaining mozzarella cheese on top.
Baking
  1. Cover the dish with aluminum foil and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  2. Garnish with fresh basil or parsley before serving.

Notes

For a healthier dish, use whole-wheat lasagna noodles or turkey sausage. Leftovers can be assembled and frozen for later use.
