Cobbler Topping

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the blackberries with 1/2 cup of sugar, lemon juice, vanilla extract, and salt. Toss gently to coat and set aside.
  3. In another bowl, whisk together flour, remaining sugar, baking powder, and cinnamon.
  4. Gradually stir in milk and melted butter into the dry mixture. Mix until just combined.
Baking
  1. Pour the batter into a greased 9x13-inch baking dish, smoothing it out evenly.
  2. Spoon the blackberry mixture evenly over the top of the batter without stirring.
  3. Bake for 45-50 minutes until golden brown and a toothpick comes out clean.
Serving
  1. Let the cobbler cool slightly before slicing. Serve warm, ideally with vanilla ice cream.

Notes

For best flavor, use fresh blackberries. If using frozen, ensure they are thawed and drained. Consider adding nutmeg or almond extract for variations.
