Preparation
  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the chopped rosemary, thyme, Dijon mustard, minced garlic, salt, and pepper to create a marinade.
  3. Rub the marinade all over the lamb chops, ensuring even coverage.
Cooking the Lamb
  1. Heat olive oil in a skillet over medium-high heat and sear the lamb chops for 2-3 minutes on each side.
  2. Transfer the seared lamb chops to a baking dish and roast in the preheated oven for 10-12 minutes.
Preparing the Mashed Potatoes
  1. While the lamb is roasting, bring a pot of salted water to boil and add the cubed potatoes.
  2. Cook until tender, about 15 minutes, then drain and return potatoes to the pot.
  3. Add milk, butter, minced garlic, salt, and pepper to the drained potatoes and mash until creamy and smooth.
Serving
  1. Serve the herb-crusted lamb chops alongside the garlic mashed potatoes, garnishing as desired.

For added spice, consider incorporating crushed red pepper flakes into the marinade. Avoid overcrowding the skillet while searing to ensure proper browning. The mashed potatoes can be prepared in advance and reheated, adding a splash of milk for creaminess if needed.
