Preparation
  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Roll out the puff pastry on a lightly floured surface and cut into heart shapes.
Custard Preparation
  1. In a bowl, whisk together egg yolks, sugar, and cornstarch until smooth.
  2. Heat heavy cream and milk in a saucepan over medium heat until warm.
  3. Gradually pour the warm cream mixture into the egg mixture while whisking continuously.
  4. Return the mixture to the saucepan and whisk constantly on medium-low heat until thickened.
  5. Stir in vanilla extract and let cool slightly.
Assembly and Baking
  1. Generously spoon custard onto each puff pastry heart, leaving a small border.
  2. Bake in the preheated oven for 12-15 minutes until golden and crisp.
  3. Once cooled, top with halved cherries and dust with powdered sugar if desired.

Store leftover pastries in an airtight container for up to 2 days. Reheat to maintain crispness. Variations include using different fruits or flavored custards.
