Ingredients
  

For the Crust
  • 2 1/2 cups all-purpose flour The foundation of our flaky crust.
  • 1 teaspoon salt Balances flavors, enhancing sweetness.
  • 1 tablespoon sugar Adds a hint of sweetness to the crust.
  • 1 cup unsalted butter (cold and cubed) Rich and buttery crust.
  • 6-8 tablespoons ice water Helps bind the crust together.
For the Filling
  • 3 cups mixed berries (blackberries, raspberries, or your choice) The stars of the pie.
  • 1/2 cup granulated sugar Sweetens the berry filling.
  • 2 tablespoons cornstarch Thickens the berry mixture.
  • 1 tablespoon lemon juice Brightens berry flavors.
  • 1/2 teaspoon vanilla extract Enhances the flavor.
  • 1 egg beaten (for egg wash) Gives a golden finish.
  • 1 tablespoon granulated sugar (optional, for sprinkling) Adds sparkle on top.

Method
 

Prepare the Pie Crust
  1. In a large mixing bowl, combine the flour, salt, and sugar.
  2. Add the cold, cubed butter into the flour mixture and mix until it resembles coarse crumbs.
  3. Gradually add ice water, one tablespoon at a time, until the dough begins to come together.
  4. Knead the dough gently and divide it into two balls, flatten into discs, and wrap in plastic wrap.
  5. Chill in the refrigerator for at least 1 hour.
Preheat the Oven
  1. Preheat the oven to 375°F (190°C).
Roll Out the Dough
  1. Remove one disc of dough from the refrigerator and roll it out into a circle.
  2. Press the dough into the pan and trim into a heart shape.
Prepare the Berry Filling
  1. In a large bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  2. Gently stir to coat the berries and allow to sit for a few minutes.
Assemble the Pie
  1. Pour the berry filling into the prepped crust.
  2. Roll out the second disc of dough and cut into strips or create a heart shape.
  3. Arrange over the filling and brush with egg wash, sprinkle with sugar if desired.
Bake the Pie
  1. Bake for 45-50 minutes or until golden brown and bubbling.
  2. Let cool for at least 30 minutes before serving.

Notes

Try using different berries or adding spices for extra flavor. Serve with vanilla ice cream or whipped cream for indulgence.
