Preparation of Filling
- In a medium bowl, beat together the unsalted butter, peanut butter, powdered sugar, heavy cream, and vanilla extract until smooth and creamy.
- Scoop out about 1 tablespoon of this mixture and roll it into small balls. Place on a parchment-lined baking sheet and freeze for at least 30 minutes.
Prepare Cupcake Batter
- Prepare your favorite cupcake batter according to package instructions or recipe.
Assembly
- Preheat the oven to 350°F (175°C). Line a muffin tin with cupcake liners.
- Spoon a small amount of batter into the bottom of each liner, then gently press a frozen peanut butter ball into the center, covering it with more batter.
Baking
- Bake in the preheated oven for about 18-20 minutes, or until a toothpick comes out clean with a swirl of gooey peanut butter.
Cooling and Serving
- Let cool slightly before serving. Enjoy the melt-in-your-mouth experience of the gooey center.
