Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper and set aside.

  4. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Beat in the egg and vanilla extract until fully combined.
  6. Gradually add the dry ingredients to the wet mixture, mixing gently until a dough forms.
  7. Using a cookie scoop or spoon, take about 1 tablespoon of dough and roll it into a ball. Flatten slightly and place a piece of dark chocolate in the center.
  8. Fold the dough around the chocolate and shape it back into a ball.
Baking
  1. Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake for 8-10 minutes, until edges are set and centers are slightly underbaked.
