Preparation
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper and set aside.
- In a medium-sized bowl, whisk together the flour, cocoa powder, baking powder, and salt.
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until fully combined.
- Gradually add the dry ingredients to the wet mixture, mixing gently until a dough forms.
- Using a cookie scoop or spoon, take about 1 tablespoon of dough and roll it into a ball. Flatten slightly and place a piece of dark chocolate in the center.
- Fold the dough around the chocolate and shape it back into a ball.
Baking
- Place the cookie dough balls onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes, until edges are set and centers are slightly underbaked.
- Let cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Use high-quality dark chocolate for the best molten centers. Consider adding a sprinkle of sea salt before baking or incorporating nuts for additional texture. Store leftovers in an airtight container for up to five days.
