Method
 

Preparation
  1. Whisk together all-purpose flour, baking soda, ground ginger, cinnamon, cloves, nutmeg, and salt in a medium-sized bowl and set aside.
  2. In a large bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Add the egg, molasses, and vanilla extract to the butter-sugar mixture and mix until combined.
  4. Gradually add the dry mixture into the wet ingredients, stirring gently until a soft dough forms. Incorporate more flour if the dough is sticky.
  5. Divide the dough into two portions, wrap in plastic wrap, and chill in the refrigerator for at least an hour.
Baking
  1. Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll out one portion of dough on a lightly floured surface to about 1/4-inch thickness and cut out shapes using cookie cutters.
  3. Place cutouts onto prepared baking sheets and bake for 8-10 minutes or until edges are lightly golden.
  4. Let cookies cool on sheets for a few minutes before transferring them to a wire rack to cool completely.
Icing
  1. Prepare the royal icing by beating egg whites (or meringue mixture) until stiff peaks form.
  2. Gradually mix in powdered sugar and vanilla extract until the icing is smooth and stiff.
  3. Divide icing into small bowls and mix in gel food coloring to achieve desired colors.
  4. Use piping bags to pipe the royal icing onto cooled cookies, creating winter forest designs.
  5. Dust edible gold dust on the deer and sprinkle fine sugar or edible glitter for the snow effect.
  6. Allow decorated cookies to dry completely before serving or packaging.
