Preparation
  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a medium bowl, whisk together all-purpose flour, cake flour, cornstarch, baking powder, baking soda, and salt. Set aside.
  3. In a stand mixer or large bowl, beat the cold, cubed butter with light brown and granulated sugar until light and fluffy for about 3-4 minutes.
  4. Add the egg and egg yolk one at a time, mixing well after each addition, and mix in vanilla extract if using.
  5. Gradually add dry ingredients to the butter-sugar mixture and mix until just combined.
  6. Fold in milk chocolate chips until evenly distributed.
Baking
  1. Using a cookie scoop, drop large dough balls onto prepared baking sheets, spaced 3 inches apart.
  2. Bake for 12-15 minutes until edges are golden brown and centers are soft.
  3. Let cookies cool on the baking sheets for 5 minutes before transferring to wire racks to cool completely.
