Method
Cooking the Pasta
- Begin by cooking the fettuccine according to the package directions. Once al dente, drain and set aside.
Cooking the Chicken
- In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the bite-sized chicken pieces and cook them until browned and fully cooked through, about 6-8 minutes. Season with salt, pepper, and Italian seasoning.
- Once cooked, remove the chicken from the skillet and set aside.
Making the Garlic Sauce
- In the same skillet, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Pour in the 1/2 cup of chicken broth, scraping up any brown bits from the bottom of the pan. Let it simmer for 2-3 minutes.
- Add 1/2 cup heavy cream and stir until smooth. Gradually mix in 1 cup of grated Parmesan cheese, resulting in a creamy sauce.
Combining Everything
- Once the sauce is creamy and heated through, return the chicken to the skillet and toss to coat everything together. Cook for an additional 2-3 minutes.
Serving
- Place the Garlic Butter Chicken Bites over the cooked pasta, and garnish with chopped parsley and extra grated Parmesan cheese.
