Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing until fully combined.
- In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Gently fold in the rainbow sprinkles.
Baking
- Scoop tablespoon-sized portions of dough and roll them into balls, spacing them about 2 inches apart on the prepared baking sheets.
- Flatten each cookie ball slightly with the back of a spoon.
- Bake for 10-12 minutes, or until the edges are golden and the centers are set.
- Allow the cookies to cool completely on a wire rack.
Assembly
- Once cooled, spread frosting on the bottom of one cookie and sandwich it with another cookie.
- Serve immediately or store in an airtight container for up to 3 days.
