Preparation
- Preheat the oven to 350°F (175°C).
- Line baking sheets with parchment paper to prevent sticking.
- In a large bowl, cream together the softened butter and sugar until smooth and fluffy, about 2-3 minutes.
- Add the egg, vanilla extract, and almond extract (if using), and mix until well combined.
- Gradually add flour and salt, mixing until a soft dough forms. Don’t overmix.
- Roll out the dough on a floured surface to about 1/4 inch thick.
- Use cookie cutters in floral shapes to cut out the cookies and place them on the prepared baking sheets.
Baking
- Bake for 8-10 minutes, or until edges are just golden.
- Allow the cookies to cool completely on a wire rack.
Royal Icing Preparation
- In a clean bowl, whisk the egg white or meringue powder with lemon juice until soft peaks form.
- Gradually add powdered sugar and continue whisking until stiff peaks form.
- Divide the icing into bowls and add food coloring as desired.
- Decorate the cooled cookies with royal icing and let set fully before serving or packaging.
Notes
Chill the dough if sticky or hard to work with. Use a variety of cookie cutters for visual appeal. Experiment with flavors by adding citrus zest. Save leftover icing for other treats.
