Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. Line baking sheets with parchment paper to prevent sticking.
  3. In a large bowl, cream together the softened butter and sugar until smooth and fluffy, about 2-3 minutes.
  4. Add the egg, vanilla extract, and almond extract (if using), and mix until well combined.
  5. Gradually add flour and salt, mixing until a soft dough forms. Don’t overmix.
  6. Roll out the dough on a floured surface to about 1/4 inch thick.
  7. Use cookie cutters in floral shapes to cut out the cookies and place them on the prepared baking sheets.
Baking
  1. Bake for 8-10 minutes, or until edges are just golden.
  2. Allow the cookies to cool completely on a wire rack.
Royal Icing Preparation
  1. In a clean bowl, whisk the egg white or meringue powder with lemon juice until soft peaks form.
  2. Gradually add powdered sugar and continue whisking until stiff peaks form.
  3. Divide the icing into bowls and add food coloring as desired.
  4. Decorate the cooled cookies with royal icing and let set fully before serving or packaging.

Notes

Chill the dough if sticky or hard to work with. Use a variety of cookie cutters for visual appeal. Experiment with flavors by adding citrus zest. Save leftover icing for other treats.
