Preparation
- Preheat your oven to 350°F (175°C).
- Lightly grease a muffin tin or small tartlet pans.
- In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and powdered sugar until it resembles damp sand.
- Press the crumb mixture evenly into the bottom and sides of the tartlet pans. Bake for 8-10 minutes or until lightly golden.
- Cool the crust completely.
Filling and Topping
- In a separate bowl, beat softened cream cheese and vanilla extract until creamy and smooth.
- Spoon the cream cheese filling into each cooled crust, spreading it evenly.
- Warm the cherry jam over low heat and spoon it over the cream cheese filling.
- Top each tartlet with halved fresh cherries and chopped pistachios.
- Chill the tartlets for at least 1 hour before serving.
