Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a muffin tin or small tartlet pans.
  3. In a mixing bowl, combine graham cracker crumbs, sugar, melted butter, and powdered sugar until it resembles damp sand.
  4. Press the crumb mixture evenly into the bottom and sides of the tartlet pans. Bake for 8-10 minutes or until lightly golden.
  5. Cool the crust completely.
Filling and Topping
  1. In a separate bowl, beat softened cream cheese and vanilla extract until creamy and smooth.
  2. Spoon the cream cheese filling into each cooled crust, spreading it evenly.
  3. Warm the cherry jam over low heat and spoon it over the cream cheese filling.
  4. Top each tartlet with halved fresh cherries and chopped pistachios.
  5. Chill the tartlets for at least 1 hour before serving.

Ensure cream cheese is softened to avoid lumps. Chill the tartlets for clean slices. For healthier options, use whole grain crackers and Greek yogurt.
