Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet by lining it with parchment paper.
  2. In a medium bowl, whisk together the all-purpose flour, baking soda, and baking powder.
  3. In a separate, larger bowl, cream together the softened butter and granulated sugar until smooth and fluffy.
  4. Add the egg, vanilla extract, and optional almond extract to the butter and sugar mixture. Mix until well combined.
  5. Gradually add the dry mixture to the wet ingredients, mixing until fully incorporated.
  6. Roll the dough into small balls about 1 inch in diameter. If desired, roll in colored sugar.
  7. Place the dough balls on the baking sheet, flatten slightly with a fork, and leave space between each.
  8. Bake for 8-10 minutes, or until the edges turn lightly golden brown. Let cool completely on the baking sheet.
  9. Optionally use a dove-shaped cookie cutter to press into each cookie before baking or decorate them with icing after cooling.

Notes

For added flavor, consider browning the butter before creaming it with sugar. Chilling the dough for 30 minutes helps maintain shape. Variations can include using different extracts or adding chocolate chips.
