  • 1 package (8 oz) cream cheese, softened Ensure cream cheese is at room temperature for best texture.
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract Can be replaced with almond extract for a different flavor.
  • 1/2 cup fresh raspberries, mashed Frozen raspberries can be used; drain excess juices.
  • 1 tbsp sugar (for raspberries)
  • 1 tbsp lemon zest (optional) Enhances flavor; use sparingly.
Dough
  • 1 package (8 oz) refrigerated crescent roll dough Can substitute with gluten-free dough.

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Unroll the crescent roll dough and separate it into triangles. Place each triangle in a greased muffin tin.
  3. In a mixing bowl, combine cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy.
  4. In another bowl, mix the mashed raspberries with sugar and optional lemon zest.
Assembly and Baking
  1. Spoon about 1 tablespoon of cream cheese filling into the center of each crescent dough triangle, followed by a small spoonful of the raspberry mixture.
  2. Bake in the preheated oven for 12-15 minutes or until golden.
  3. Let the bites cool for a few minutes before serving. Optionally, garnish with fresh raspberries or a dusting of powdered sugar.

Notes

For best results, ensure cream cheese is softened before mixing. Avoid overfilling to prevent spillage during baking. Can be stored in an airtight container in the refrigerator for up to three days.
