Preparation
  1. In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat to keep the soup light.
  2. In the crockpot, add the cooked meat along with diced onion, minced garlic, black beans, kidney beans, corn, diced tomatoes, broth, taco seasoning, smoked paprika, bell pepper, and frozen mixed vegetables.
  3. Stir everything to combine, and taste before adding salt and pepper as needed.
Cooking
  1. Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
  2. Once done, stir the soup and adjust seasoning if needed. Serve hot with desired toppings.

Notes

Consider adding a dash of hot sauce or diced jalapeños for a spicy kick. Use leftover vegetables to make this recipe even more versatile. Sautéing onions and garlic before adding to the crockpot enhances their flavor.
