- In a skillet over medium heat, brown the ground beef or turkey until fully cooked. Drain any excess fat to keep the soup light.
- In the crockpot, add the cooked meat along with diced onion, minced garlic, black beans, kidney beans, corn, diced tomatoes, broth, taco seasoning, smoked paprika, bell pepper, and frozen mixed vegetables.
- Stir everything to combine, and taste before adding salt and pepper as needed.
Cooking
- Cover the crockpot and cook on low for 6-8 hours or on high for 3-4 hours until the vegetables are tender.
- Once done, stir the soup and adjust seasoning if needed. Serve hot with desired toppings.
