Ingredients
  

For the Mixture
  • 2 cups Mashed Potatoes (cooled) Use leftover mashed potatoes for best results.
  • 1 cup Shredded Cheddar Cheese Feel free to experiment with other types of cheese.
  • 1/2 cup Breadcrumbs Regular breadcrumbs for the mixture.
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/4 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 no Egg, beaten For coating.
  • 1 cup Panko Breadcrumbs (for coating) Adds extra crunch.
  • to taste Oil for frying (vegetable or canola) Ensure it's hot enough for frying.

Method
 

Preparation
  1. In a large bowl, combine the cooled mashed potatoes, shredded cheddar cheese, breadcrumbs, garlic powder, onion powder, salt, and black pepper. Mix well until every ingredient is evenly incorporated to create a cohesive mixture.
  2. Scoop about a tablespoon of the mixture, and roll it into a ball using your hands. Make sure they are firmly packed so they hold their shape during frying. Repeat this process until the entire mixture has been formed into balls.
Coating and Frying
  1. Dip each potato ball into the beaten egg, ensuring it is fully coated to help the breadcrumbs adhere. Then, roll the ball in the panko breadcrumbs until well-coated.
  2. In a deep fryer or large pan, heat the oil to around 350°F (175°C).
  3. Carefully fry the potato cheese balls in batches for about 3-4 minutes or until they turn a beautiful golden brown and are crispy on the outside.
  4. Once cooked, remove the potato cheese balls and place them on paper towels to drain excess oil. Serve with a dipping sauce of your choice.

Notes

For an extra crunch, fry in small batches. You can also bake them at 400°F for 20-25 minutes. Experiment with different cheeses or add herbs for unique flavors.
