Method
 

Preparation
  1. In a deep pan or pot, heat oil to about 350°F (175°C), ensuring it’s properly heated to achieve a perfect fry without absorbing excess oil.
  2. In a bowl, mix the flour, cornstarch, salt, black pepper, paprika, and garlic powder. Whisk these dry ingredients together until well combined. Gradually add the cold soda water, stirring until you achieve a smooth, lump-free batter.
  3. Dip each cod fillet first into the batter, ensuring it’s fully coated. Then, transfer it to a plate with panko breadcrumbs, pressing slightly to ensure an even and thick coating of the crunchy breadcrumbs.
Cooking
  1. Carefully place the coated cod fillets into the hot oil. Fry for about 4 minutes on each side, or until they’re golden brown and crispy.
  2. Remove the fried cod from the oil and let them drain on paper towels. Toast the sandwich buns if desired.
Assembly
  1. Spread a generous amount of tartar sauce on each bun, layer with crispy cod, add fresh lettuce, and tomato slices.
  2. Close the sandwich and serve immediately.

Notes

Consider adding cayenne pepper for an extra kick in your batter. For healthier options, try baking the cod instead of frying, using olive oil and seasoning.
