Preparation
- Preheat your oven to 400°F (200°C).
- Line a baking sheet with parchment paper and lightly spray it with olive oil.
- In a large mixing bowl, combine the steamed broccoli florets, cheddar cheese, parmesan cheese, breadcrumbs, chopped green onions, egg, garlic powder, onion powder, salt, and pepper. Mix well.
- Form small bite-sized balls or patties from the mixture.
- Place the formed bites on the prepared baking sheet, spaced evenly apart.
- Lightly spray the tops of the bites with olive oil.
- Bake for 15-18 minutes, or until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
For added flavor, experiment with spices like paprika or crushed red pepper flakes. For a crunchier texture, use crushed cornflakes or panko breadcrumbs. You can chill the bites before baking for better shape retention. These bites can be frozen for up to three months.
