Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Line a baking sheet with parchment paper and lightly spray it with olive oil.
  3. In a large mixing bowl, combine the steamed broccoli florets, cheddar cheese, parmesan cheese, breadcrumbs, chopped green onions, egg, garlic powder, onion powder, salt, and pepper. Mix well.
  4. Form small bite-sized balls or patties from the mixture.
  5. Place the formed bites on the prepared baking sheet, spaced evenly apart.
  6. Lightly spray the tops of the bites with olive oil.
  7. Bake for 15-18 minutes, or until golden brown and crispy.
  8. Serve immediately with your favorite dipping sauce.

Notes

For added flavor, experiment with spices like paprika or crushed red pepper flakes. For a crunchier texture, use crushed cornflakes or panko breadcrumbs. You can chill the bites before baking for better shape retention. These bites can be frozen for up to three months.
