Method
 

Preparation
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the Italian sausage to the pot, breaking it up with a spoon as it cooks until browned. Remove and set aside.
  3. In the same pot, add the diced onion, carrots, and celery. Sauté for 5-7 minutes until softened, then add minced garlic and cook for another minute.
Cooking
  1. Pour in the chicken broth and diced tomatoes; bring to a gentle simmer.
  2. Add ditalini pasta and cook for 8-10 minutes or until tender.
  3. Stir in the cooked sausage, heavy cream, Parmesan cheese, and Italian seasoning. Simmer for another 5 minutes until thickened.
  4. Season with salt and pepper to taste, garnish with fresh parsley, and serve warm.

Notes

To enhance flavors, use fresh ingredients and consider spicy sausage for heat. For a lighter option, use half-and-half or a non-dairy alternative. You can also add spinach or kale for extra nutrients.
