Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Season the chicken breasts generously with salt and pepper.
  3. Dredge each chicken breast in flour, then dip in beaten eggs, and finally coat with breadcrumbs mixed with Parmesan cheese.
Cooking
  1. Heat olive oil in a large skillet over medium heat. Cook the coated chicken for approximately 4-5 minutes on each side until golden brown.
  2. Remove the chicken from the skillet and set aside.
  3. In the same skillet, add minced garlic and cook for 1-2 minutes until fragrant.
  4. Pour in chicken broth and heavy cream, stirring to combine. Bring to a gentle simmer for 3-5 minutes.
  5. Return the chicken to the skillet, sprinkle mozzarella cheese over the top, cover the pan, and let melt for 2-3 minutes.
  6. Garnish with chopped parsley before serving.
