Preparation
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, and frozen mixed vegetables.
- Sprinkle in the garlic powder, onion powder, salt, and pepper.
- Stir the mixture until everything is well blended.
- Pour the mixture into a greased 9x13 inch casserole dish.
- Sprinkle the shredded cheddar cheese over the top.
Baking
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15-20 minutes until the cheese is bubbly and golden brown.
- Remove from the oven and let cool slightly.
- Garnish with fresh parsley if desired and serve warm.
Notes
For extra flavor, sauté onions and garlic in olive oil before mixing. You can add your favorite herbs for freshness or top with crushed crackers or breadcrumbs for crunch.
