Preparation
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the cooked chicken, uncooked rice, chicken broth, cream of chicken soup, frozen mixed vegetables, cheddar cheese, sour cream, garlic powder, onion powder, salt, and pepper. Mix until everything is evenly combined.
- Pour the mixture into a greased 9×13-inch baking dish, spreading it evenly.
Cooking
- Cover with aluminum foil and bake in the preheated oven for 30 minutes.
- Remove the foil and continue baking for an additional 15-20 minutes, or until the rice is tender and the casserole is bubbly and golden on top.
- Once done, allow it to cool slightly before garnishing with fresh parsley. Serve hot and enjoy!
Notes
For added flavor, consider sautéing some onions and garlic in olive oil before mixing with the other ingredients. Optional: sprinkle crushed red pepper flakes for heat or top with crispy onions before the final bake.
