Method
 

Preparation
  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, chopped celery, and carrot to the pot. Cook for 5-7 minutes until softened.
  3. Stir in the tomato paste, Old Bay seasoning, paprika, cayenne pepper, salt, and pepper. Toast the spices for 1-2 minutes.
  4. Pour in the seafood stock and bring to a simmer. Cook for 10 minutes to blend flavors.
  5. Add the crab meat and shrimp. Cook for 5-7 minutes until shrimp are pink.
  6. Reduce heat and stir in the heavy cream and butter until smooth and creamy.
  7. Use an immersion blender to puree to your desired texture.
  8. Serve hot, garnished with fresh herbs or a drizzle of cream.

Notes

Use freshly sourced seafood for the best flavor. Consider adding herbs or a splash of lemon juice just before serving. Store in airtight containers, freezing if necessary.
