Method
 

Preparation
  1. In a large mixing bowl, combine the cottage cheese, all-purpose flour, baking powder, salt, olive oil, egg, and garlic powder (if using). Stir gently until the ingredients start to come together into a dough.
  2. If the dough is too dry, add water one tablespoon at a time until it achieves a soft, pliable consistency.
  3. Lightly flour a clean surface and knead the dough for a few minutes until it becomes smooth and elastic.
  4. Divide the dough into small equal portions and roll each piece into balls. Flatten these balls gently and roll them out into flat discs, about 1/4-inch thick.
Cooking
  1. Preheat a non-stick skillet over medium heat.
  2. Carefully place each flatbread in the skillet and cook for approximately 2-3 minutes on each side, or until golden brown and cooked through.
  3. Remove from the skillet and serve warm.

Notes

Add herbs or spices to the dough for more flavor. Whole wheat flour can be used for a softer texture, and extra olive oil can be brushed on the outside for a crispy finish.
