Preparation
  1. In a large mixing bowl, beat together the softened butter and granulated sugar until light and fluffy.
  2. Add in the large egg and one teaspoon of vanilla extract. Beat until well combined.
  3. In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  4. Gradually add the dry mixture to the wet mixture, blending gently until a soft dough forms.
  5. Divide the dough into discs, wrap in plastic wrap, and refrigerate for at least one hour.
Baking
  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. Roll out one disc of dough to about 1/4 inch thick and cut out shapes with cookie cutters.
  3. If desired, sprinkle with colored sugar before baking.
  4. Bake for 8-10 minutes or until the edges are lightly golden.
  5. Allow cookies to cool completely on a wire rack before decorating.
